Chivalry includes an honor code, not just to those who outrank you, but to everyone in one way or another. One thing sorely missing is a more formal code of conduct on how to behave to the opposite sex including not lying to or using people. This is a big piece of what people want.

You also seemed to miss what the female part of chivalry is. It's not just batting eyes and saying thank you, it's honoring the other person and the part they play by creating a complimentary role for oneself, whether that's doing graphic art if the other is a performer or using your social role as a way to expand connections for the teamwork you do together.
